  • 1.5 lbs boneless chicken thighs Can substitute with chicken breasts or tofu.
  • 1 cup salsa For added flavor; consider using store-bought for time savings.
  • 2 cups black beans Must be drained and rinsed.
  • 1 cup corn Can be frozen or canned.
  • 1 teaspoon cumin Adds warm flavor.

Preparation

  • If using chicken thighs, trim any excess fat and place them at the bottom of the crockpot.
  • Pour the salsa over the chicken, making sure it's well coated.
  • Add the black beans and corn to the pot, followed by the cumin. Give it a gentle stir to combine.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Before serving, shred the chicken with two forks right in the pot.
  • Mix everything together and let it rest for a few minutes. Serve with tortillas or rice.

Notes

For extra flavor, try adding a squeeze of lime juice just before serving. You can substitute black beans with lentils or use cauliflower rice for a healthier option. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
