Ingredients
  

  • 5 fresh peaches peeled and sliced
  • 1 tablespoon lemon juice
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar for topping
  • 1/2 cup cold unsalted butter cut into cubes
  • Pinch of salt

Instructions
 

  • Preheat your oven to 350°F (175°C). Lightly butter an 8x8-inch baking dish.
  • Prepare the filling: In a large bowl, toss the sliced peaches with lemon juice, granulated sugar, brown sugar, cinnamon, vanilla, and cornstarch. Pour into the baking dish.
  • Make the crisp topping: In another bowl, mix oats, flour, brown sugar, salt, and cold butter. Use your fingers or a pastry cutter to blend until crumbly.
  • Assemble your homemade peach crisp: Sprinkle the topping evenly over the peach mixture.
  • Bake for 35–40 minutes or until the topping is golden and the peach filling is bubbling.
  • Let it rest for 10 minutes before serving. Enjoy warm, ideally with a scoop of vanilla ice cream.

Notes

You can use frozen or canned peaches if fresh aren't in season. Add chopped pecans to the topping for extra crunch. Serve warm with vanilla ice cream or whipped cream
