Ingredients
  

  • 1 lb cooked shrimp peeled and deveined
  • - 1/2 cup mayonnaise or Greek yogurt
  • - 1 tbsp lemon juice
  • - 1/2 cup celery finely chopped
  • - 1/4 cup red onion diced
  • - 1 tbsp Dijon mustard
  • - 1 tsp Old Bay seasoning optional
  • - Salt and pepper to taste
  • - 1 tbsp fresh dill or parsley chopped

Instructions
 

  • In a large bowl, mix the mayonnaise (or Greek yogurt), lemon juice, Dijon mustard, Old Bay seasoning, salt, and pepper.
  • Add the cooked shrimp, celery, and red onion to the bowl and toss until well coated.
  • Gently fold in the fresh dill or parsley.
  • Cover and refrigerate for at least 15 minutes for flavors to blend.
  • Serve chilled, on lettuce leaves, in a sandwich, or with crackers.

Notes

 
  • Shrimp: Use fresh or frozen shrimp. Make sure to peel and devein them before cooking. You can also use pre-cooked shrimp for convenience.
  • Dressing: Adjust the dressing to your taste by adding more lemon juice for a tangy flavor or extra mayo for creaminess.
  • Vegetables: Feel free to add other veggies like cucumber, cherry tomatoes, or avocado for extra texture and flavor.
  • Seasoning: Add a pinch of cayenne pepper or paprika for a little heat.
  • Storage: Shrimp salad can be stored in the fridge for up to 2 days. Avoid storing with the dressing if you plan to keep leftovers for longer.
  • Serving: Serve on a bed of lettuce, in a sandwich, or with crackers for a light meal or appetizer.
